# ¡Yappah! Brand Launched by Tyson Innovation Lab to Combat Food Waste

The chef-designed snack, PROTEIN CRISPS, made from salvaged ingredients, is set to launch on May 31 as the first product of the brand. Chicago, Illinois - May 31, 2018 - Tyson Innovation Lab, a division of Tyson Foods, Inc. (NYSE: TSN) responsible for introducing new consumer products to the market within a six-month timeframe, is launching ¡Yappah!, its inaugural brand. The brand's debut is scheduled for May 31st with a campaign on Indiegogo, a crowdfunding platform, and it encourages consumers to reconsider snacks for the better. The brand name ¡Yappah! is derived from a South American Andes tradition known as "yapa," which is a small extra gift a merchant gives to a valued customer to ensure nothing goes to waste. Rizal Hamdallah, Head of Tyson Innovation Lab, stated, “The mission of the ¡Yappah! brand is distinctive, significant, and has a broad impact. The brand was established to motivate individuals and partners to reassess their relationship with food and its effect on society. Through this launch, we aim to tackle global food issues such as food waste." Tyson Innovation Lab sought partnerships with companies that share their vision to combat food waste. Considering the magnitude of the food waste issue, Tyson Innovation Lab looked for collaborations with companies that share their vision. The first product under the ¡Yappah! brand, Protein Crisps, is made from salvaged and repurposed vegetable and grain-based ingredients that would otherwise be discarded. Tyson Foods supplies repurposed chicken breast trim, which is still flavorful and protein-rich, and combines it with either salvaged vegetable puree from juicing or salvaged Molson Coors spent grain from beer brewing to create the line’s four flavors. Hamdallah stated, “The development of the Protein Crisps would not have been possible without the enthusiastic collaboration of partners like Molson Coors. We will continue to seek out other excellent partners, both large and small, who have resources and objectives that align with ours." David Durkee, Senior Director of R&D and Innovation for Molson Coors, said, “This collaboration aligns with our sustainable brewing priorities to tackle waste. There is a tremendous potential to repurpose our spent grains into remarkable products, and this is a key area of development for our innovation team." The ¡Yappah! brand is intended to serve as a platform for launching future products and product categories that help address significant social and sustainability issues related to food. Hamdallah added, “With the Protein Crisps, we are transforming ‘forgotten’ ingredients into a delicious protein snack. For the ¡Yappah! brand, sustainability is not an afterthought, it’s our core principle. The fight against food waste is just the beginning." A snack designed by a chef trained at a Michelin-Star restaurant In January 2018, Tyson Innovation Lab was challenged to reconsider the culinary possibilities for ingredients that are typically discarded during food production, often resulting in food waste. Chef Kang Kuan, Executive Chef at Tyson Innovation Lab, said, “We aimed to be ingredient-driven to create a flavorful snack that people would absolutely love." Chef Kang, who has built his culinary career at highly original and nationally acclaimed restaurants such as the French Laundry and Morimoto, said, “I was excited by the opportunity to source ‘forgotten’ ingredients and compose them into something more flavor nuanced and protein-filled than typical snack foods. People might not realize that vegetable pulp left behind during juicing is arguably better and richer tasting than the juice itself, and spent grain is surprisingly delicious. So, we had these amazing flavors to work with. The result is a crispy snack that comes in four culinary-driven flavors that will appeal to all food lovers." The four flavors are: From Salvaged Veggie Puree Chicken Carrot- Curry Flavored Chicken Celery- Mojo Flavored From Salvaged Spent Grain Chicken IPA White Cheddar Chicken- Shandy Beer Flavored The ¡Yappah! brand’s commitment to using salvaged ingredients stems from a major food challenge The team is passionate about the idea that rescuing ‘forgotten’ ingredients means using food to its full potential. The statistics behind the wasted food challenge are overwhelming. In the U.S. alone, nearly one-third of all food used in food production ends up as waste, according to the Food and Agriculture Organization of the United Nations. The average person wastes 3.5 pounds of food per week and uneaten food equates to Americans throwing out as much as $218 billion each year, most of which ends up rotting in landfills where it emits harmful greenhouse gases.
