# Chairman’s Reserve Prime Pork Launches Tenderness Claim

In a recent analysis, the Chairman's Reserve® Prime Pork brand from Tyson Fresh Meats was found to be 25% more tender than other top pork brands without added solution, according to a statement from Dakota Dunes, S.D. on February 23, 2018\. The analysis was carried out by an independent entity that compared Chairman's Reserve Prime Pork with other competing brands of varying quality. The number of loin samples was determined using statistical tests to identify the necessary number to detect a difference. Heather Rode, Senior Specialist in Fresh Meat Research, explained that two distinct shear force methods were employed to test tenderness. "The shear force method is a quantifiable measurement. When consumers are asked about meat tenderness, their answers can be highly subjective—this method provides us with exact values that measure the force required to cut the meat." During the analysis, steps were taken to ensure that factors influencing tenderness were consistent. These factors included product age, cooking temperature, and cut location for shear testing.
